John Dory or St. Pierre as it is known in Europe is a delicious fish with delicate white flesh and a firm, flaky texture. A saltwater fish, has a mild, slightly sweet flavor, and can be servedsautéed, baked, steamed, poached, or even coated in breadcrumbs and fried. This is a WILD CAUGHT, local species that we are lucky enough to procure from one of our long-time purveyors that hail out of Maryland. Fresher Fish you can not ask for. This is one of our favorite species and one not to miss!!
One of my favorite ways to cook this delicate fillet is a simple quick saute. The meat will almost double in size with it hits the hot pan. It is actually pretty cool to see. After 2 minutes on each side place in a 350-degree oven with some seasoned bread crumbs for another 6 minutes and dinner is served!!
Top with a drizzle of seasoned olive oil or a squeeze of fresh lemon and enjoy!
