This fish comes from our partners in Neha Bay in Washington State. THESE 8-pound fish are beautiful for serving as a centerpiece to your buffet or plated sitdown feast.  We are happy to remove the center bone to make for easy serving - just let us know in the memo line. 

Super easy to cook on the BBQ  - Just wrap in foil after you season the inside with your favorite herbs and spices. 

I personally like to make a mix of brown sugar, dijon, and a touch of chili flake.

medium heat for 35 / 45 minutes - the last 15 minutes I open the foil to crisp things up If you do this on an ovenable serving tray and garnish with veg & starch around the fish it will look very festive when it is done.  Happy Cooking - Chef Adam
