It is a fancy word for thinly sliced BBQ'ed beef in the Korean style. It is hot, sweet, tangy, and super delicious. As Chef Adam likes to say, "The Sauce is the Boss" on this dish. It has been served at many of our functions and people seem to go wild for this dish - you can be the judge for yourself.
The dumpling is made with super high-quality Pat Lafrieda boneless Shortribs - check out the pics below, from raw to cooked - yum! - they are gorgeous! We sear them crispy and then braise for 7 hours till fork tender and combine with simple natural ingredients like napa cabbage, leeks, and aromatics to make a fantastic taste sensation.
