There are four grades of tuna: #1, #2+, #2, and #3. The grade is based on the appearance, shape, color, texture, and fat content. #1 is the highest grade and also called sushi grade or sashimi grade. #2+ resembles the #1 in many ways but is typically slightly leaner. #2 is what your will find in your typical restaurant as it is still high quality product but at a more affordable price point.
